Besan ki Barfi is a very popular recipe in India and Pakistan. Â It is a sweet and mouthwatering Indian dessert made with besan (gram flour) and ghee. Â These are usually made during festivals like diwali, holi etc and can be easily brought from the market. Surprising part is that they can be made at home too as they are really simple to make and tastes awesome.
Letâs start with the procedure of making Besan Ki Barfi
Ingredients for Besan Ki Barfi
- Besan (gram flour) â Â¾ cup
- Sooji â Â¼ cup
- Milk â Â½ cup
- Sugar â Â½ cup
- Green cardamom powder â 1 tsp
- Dry fruits â some
How to cook Besan Ki Barfi
Firstly we will prepare sugar syrup. Â Take Â½ cup of sugar and Â½ cup of water and cook on high flame. Â It should have two thread consistency. Â When the syrup is ready, add cardamom powder and turn off the gas. Â Now we will roast the besan (gram flour).
Take a pan, put 1 tbsp of ghee. Â Add besan when ghee gets heated and keep stirring. Â Keep the flame to minimum for roasting the besan. Roast the besan till you get aroma out of it. Also add sooji in the pan and mix well. Â Roast the mixture till it becomes golden brown.
Now add the sugar syrup in the mixture once it becomes golden brown and stir it continuously till all lumps get dissolved. Â Also add milk to the pan and cook it till the mixture becomes little dry.
Transfer the contents in to a greased plate; spread it evenly with your hands. Â Sprinkle some dry fruits on it and freeze it for 1 hour and then cut the slices out of it. Â Give any shape you desire (diamond or square).
Besan Burfi is ready. Â It can be stored in refrigerator for 10 -15 days.
